You can visit "Happy Home Baking" blog (http://happyhomebaking.blogspot.com) and there is a pineapple tarts recipe that is quite similar to mine,except I did them closed and decorated with cloves.It sounds to me that your mum has over baked the tarts, or knead the dough for too long. I used the creaming method instead of the rub-in method. I'm not sure about your mum's.
